1 cups sugar (or slightly more to taste)
1 cup oil
Juice and grated rind of one orange
3 teaspoons baking powder
1 teaspoon salt (optional)
1 teaspoon vanilla
4 1/2 to 5 cups flour
Filling of your choice (you can buy or make poppyseed filling or any jelly/jam of your choice)
Preheat oven to 350 degrees.
In a large bowl, beat eggs with all ingredients except flour. Gradually add flour; stop adding flour when well beaten dough is stiff. (A stand mixer is helpful, but not necessary.)
Roll out dough on floured board. Cut into circles using a drinking glass rim.
Put 1 t. filling in each circle and pinch into triangle shape (if you don’t pinch well, it will come open during baking). Brush with beaten egg. Bake in preheated oven at 350 until light golden brown, about 15-20 minutes.
Allow to cool on cooling rack.
